Apart from the fact that I got very (very) hungry looking at these photos, I found Fred's article on how they're marketing themselves over in LA to be pretty interesting. It's definitely work building a brand and getting your name out, but with a bit of hard work and ingenuity, it can happen so much quicker (and cheaper) than in the pre-internet days.
